MARINATED MUSHROOMS

Yield: 10 servings

INGREDIENTS

-  1 pound white mushrooms, washed and halved
-  1 medium onion, cut in half and thinly sliced
-  1/4 cup white vinegar
-  1/4 cup vegetable oil
-  2 tablespoons sugar
-  1/2 teaspoon dried oregano
-  1/2 teaspoon salt
-  1/4 teaspoon black pepper

DIRECTIONS

Place the mushrooms in a medium saucepan and cover with water.
Bring to a boil over high heat, then reduce the heat to
medium-low and simmer for 20 minutes; drain and let cool.

In a glass container with a tight-fitting lid, combine the
remaining ingredients; mix well. Add the cooked mushrooms,
stir, cover, and chill for at least 2 hours before serving.
Mushrooms can be stored in a tightly closed glass container
in the refrigerator for up to 1 week.

Calories: 77, Fat: 6 g, Cholesterol: 0 mg, Sodium: 119 mg,
Carbohydrate: 6 g, Dietary Fiber: 1 g, Sugars: 4 g, Protein: 1 g
